Leftover Turkey ... and Bacon

Leftover turkey is one of those items that can hang out in the refridgerator for a while post the Thanksgiving dinner. For the first couple of days after, having another round of the whole meal isn't a big deal; however, at least for me, by the Saturday after Thanksgiving, I'm over the mashed potatoes, gravy, etc. So what else can be made?
Tetrazzini? Sure, Soup? Sure, that can be done too - and they are delicious; however, we wanted something different. And neither of us was super hungry ... so - what about tacos?
A quick Google search led me to several recipes for turkey tacos; while I've made them with ground turkey in the past, leftover turkey breast and thigh meat were a new challenge. I leveraged the recipe found here: https://jz-eats.com/leftover-turkey-tacos/, which was a great base. But I also had some cooked bacon that I needed to use up, so... we had Turkey/Bacon tacos, and I'm telling you, they were far better than I could have imagined. As you can see in the last picture, I used the finished product more as a dip for the chips ... my partner had it burrito style, it was gone before I got a picture!
