A delicata squash, leftover seasoned pork rib meat, and leftover roasted potatoes walk into a ...

Sometimes dinner invents itself, random leftovers and a squash I picked up a couple weeks ago are what I had last night. Truth be told, these leftovers had to go to make room for the new leftovers that will happen on Thursday after Thanksgiving.

So what do you do with a squash, leftover pork, and potatoes? Well, get creative.

This time of year, squash makes a wonderful container for filling meals, which can be done in about an hour. Other items I had in the refrigerator to round out the filling: baby kale and a 1/4 of a red onion that needed to be used up.


Ingredients:

1 Squash medium-sized - I had a Delicata, same process and ingredients can be used if you have an Acorn squash

2 Tbsps Maple Syrup (divided)

3 Tbsps Olive Oil (divided)

2 tsp Fresh Rosemary chopped or 1 tsp crushed dried Rosemary (divided)

1/2 tsp Salt (divided)

1/2 tsp Pepper (divided)


Filling:

2 Cups left leftover BBQ Seasoned Pork Rib meat

1 Cup left leftover Roasted Baby Red Potatoes

1/4 Red Onion

Pre-washed Baby Kale (could use spinach or arugula)


Topping:

1/4 Cup Panko (or plain bread crumbs)

3 Tbsp finely grated Pecorino Cheese (or Parmesan --- not from a can)


Additional Olive Oil for cooking


Here is what I did:


Stuffed Delicata Squash

  1. Turn on the oven to 400°F and line a small baking sheet with parchment paper.

  2. Slice the squash in half (lengthwise) and scoop out the seeds (toss them in the compost, or you could roast them if you wanted)

  3. Mix together the following:

    1. 1 T Maple Syrup

    2. 2 T Olive Oil

    3. 1/4 tsp salt

    4. 1/4 tsp pepper

    5. 1 tsp chopped fresh rosemary (or 1/2 tsp crushed dried rosemary)

  4. Take the oil/syrup mix and pour half into each half of the squash, use your fingers or a brush to cover all the flesh (the inside of the squash) with the mix

  5. Put in the oven and bake for about 40 minutes. When it is "fork tender" (take a fork and poke it! If the fork goes in easily, it is done).


While the squash is baking:

  1. Take the potatoes and dice them up so you have about 1 C.

  2. Pull the meat off the cooked ribs, clean off the fat, and dice, so you have about 2 C.

  3. Dice the red onion, 1/2 C

  4. Use a medium-sized saute pan and warm it up over medium heat, add about 1 Tbsp of Olive Oil, and warm it

    up.

  5. Add the pork, potatoes, and red onion.

  6. Sauté until heated through and onions start to become translucent

  7. Add a handful of Baby Kale (roughly 1 1/2 Cups) and saute until wilted

  8. Set aside


Topping:

  1. Mix the Panko with the remaining Rosemary, Olive Oil (1 Tbsp), Maple Syrup (1 Tbsp), salt, pepper, and cheese.


When squash is fork-tender, remove from oven and turn oven to high broil

Fill squash halves with pork mix

Top with Panko mixture


Put it into the oven on a rack close to the top!

Broil for 5-8 minutes


That's it ... dinner is ready!
